A favorite way to use leftover turkey is to create turkey soup. So simple and so delicious!
**Start by making a stock from the turkey bones. Take the turkey carcass with leftover turkey meat along with onion, celery, a bit of garlic & herbs. Cover with water & let it simmer for a few hours on low. Remove the bones and vegetables, keeping the turkey, and start your soup. It’s that easy!
** LEFTOVER TURKEY NOODLE SOUP **
• 6 cups homemade turkey stock or canned
• One bay leaf
• 1 cup diced carrots
• 3/4 cup chopped onions
• 3/4 cup diced celery
• 2 garlic cloves, minced
• salt, to taste
• fresh ground pepper
• 1/4 cup chopped parsley
• 3 oz. no yolk egg noodles
• 2 cups leftover turkey, about 8 ounces
1 – Fill large saucepan with turkey stock
2- Add bay leaf, carrots, onion, celery, garlic, and salt & pepper to taste. Simmer 10 – 15 minutes until vegetables are soft.
3 – Add parsley, noodles and shredded leftover turkey. Cook according to noodle directions, about 5 minutes.
4 – Discard bay leaf & serve
