Christmas Coconut Date Balls

This recipe isn’t just for Christmas but it is the only time I make it.  I have had requests to do ideas for Christmas in a tiny home.  How do you make it feel Christmassy and decorate for the season? Please, let me know in the comments. Really, the possibilities are endless.  But I like the basics.  Food.  Making yummy treats and listening to Christmas music really puts me in the Christmas Spirit.  I have a basic Christmas platter (I purchased it at a thrift store one year) that can be used to display nearly anything.  I have done crackers and cheese, grapes and cheese, an assortment of cookies and treats.  Then just grab a simple plant arrangement.  This one was from Costco.  I can keep it for as long as I want or toss it when I am done.  You can decorate the little tree even.  Add a Christmas kitchen towel and light a candle.  That is the simple way.

Coconut Date Balls

2 cups graham cracker crumbs

1 cup chopped dates

3 cups miniature marshmallows

1 cup chopped walnuts

1 can sweet and condensed milk


Mix together by hand and roll into balls. Roll the balls in shredded coconut.   Place on waxed paper and refrigerate.
