One Pot Zuppa Toscana Soup

This is my healthy version of Zuppa Toscana Soup.  Some people like using cream and potatoes instead of the coconut milk, cauliflower and zucchini.  I have seen several variations.  This is my easy way.

One Pot Zuppa Toscana Soup

  • 2 tbs coconut oil
  • 1 cup diced onion
  • 1 tbs minced garlic
  • 1 lb Italian sausage (choose mild to hot depending on your taste)
  • 1 lb ground turkey
  • salt and pepper to taste
  • 2 cups chopped zucchini
  • 1 head cauliflower chopped
  • 1 can fire roasted diced tomatoes
  • 4 cups chicken stock (depending on how soupy you want it)
  • 1 can coconut milk

Instructions

  • In a large pot add coconut oil, onions and garlic.  Sauté for 3-4 minutes.  Add sausage and ground turkey.  Cook until done.
  • Add zucchini and cauliflower.  Cook for 3-4 mintues stirring occasionally.
  • Add roasted tomatos and chicken stock.  Bring to a boil.  Simmer for 30 minutes.
  • Add coconut milk and heat through.

One big pot. Little mess.  Easy peasy!!  Enjoy.
